And the high quality of Boriassi wines is a result of this passion for an ancient art, a farming tradition, which for more than a century has grown in step with the rhythm of the seasons, following its natural cycle.
Meticulous attention is given to every stage of cultivation: from the choice of the best and healthiest grapes of the harvest, gathered by hand, the bunches laid in boxes so as not to squash them, to the soft pressing, which maintains the high quality of the fruit, right up to the ‘off skins fermentation process’ (for the Vermentino wine) in stainless steel vats, so as not to lose any of its precious bouquet.
